Wine Profile
Tasting Notes
APPEARANCE: Deep red with a lustrous hue. BOUQUET: Intense aromas of ripe red fruit and fresh raspberry are in harmony with hints of dark cocoa and a delightfully delicate white pepper spice. PALATE: The lively palate is attractive and attention-grabbing, with dark fruits and, as with the nose, an ever-so-subtle sweet chocolate nuance. The delicate, yet well-defined tannins lead into a beautifully long finish.
Vineyard Notes
A wetter than usual winter in McLaren Vale was followed by far drier and warmer conditions than average, spanning from late August through to early January. Due to the unusually warm growing season, flowering began early and crops were light across the region. As a result of several small heat bursts and rain events, ripening occurred evenly across most varieties, and harvest also began early - one of the earliest on record, in fact. Overall, the quality achieved, especially with the reds, was excellent, with fruit showing great balance and depth of both color and flavor. Blewitt Springs is a growing area located towards the north eastern boundaries of the McLaren Vale region. The furthest from the sea, it is also home to the highest vineyards in the district. The vineyard chosen for our single vineyard shiraz shows great character and individuality. Grown on a north facing slope overlooking Bakers Gully, the soil profile is deep sand over clay, interspersed with quartz and ironstone, and it consistently produces elegant, interesting and distinctive Shiraz each season.
Winemaker Notes
The fruit for this wine was harvested in late February during the cool of the morning and delivered to the winery for destemming and crushing. The must then spent just over a week on skins before being gently pressed to 3 year old French oak, where it completed malolactic fermentation. The wine was then racked and returned to the same barrels for around 16 months maturation.
Food Pairing Notes
Enjoy with ribeye steak with blue cheese sauce.
